Hello, I am Emily and I love baking. I have a 3 year old daughter Sophia who loves cakes and she always helps me in the kitchen. Last weekend my husband Mike was out of town, so with my little one I planned to bake a red velvet cake. Sophia was quite excited as we both love it. Here are a few simple tips to be followed to bake a scrummy red velvet cake.
To make a 1 kg round cake you will need:
175g unsalted butter, at room temperature, plus extra for greasing
450g caster sugar
3 eggs, at room temperature
3 tbsp cocoa powder
1 heaped tsp Sugarflair Red Extra food coloring
1 tsp vanilla extract
500g plain flour
1 tsp salt
340ml buttermilk
1½ tsp bicarbonate of soda (baking soda)
1½ tsp cider vinegar
For the cream cheese frosting
125g unsalted butter
175g full-fat soft cheese
500g icing sugar
Method
1) Preheat the oven to over 180 degrees Celsius. Grease the outer layer of the cake tin with baking parchment and butter.
2) Beat the butter for a minute or so, until it is light and fluffy. Now you can mix some icing sugar and beat it properly. Beat in eggs at one time and add other ingredients like cocoa, food coloring and vanilla extract.
3) Add the flour and salt in to the bowl, then mix the butter in three stages alternating with the buttermilk and scraping down after each addition.
4) Take a separate bowl add soda and cider vinegar in a bowl whisk it until it bubbles up. Add this mixture to the cake batter.
5) Bake the cake for maximum an hour. After half an hour, cover the top of the cake with foil so that it doesn’t browns up too much.
Remove the foil and leave the cake to cool on a wire rack for around 20 minutes. 6) Remove it from the tin and leave it to get completely cooled before decorating.
7) For frosting beat the butter until softened, then add some soft cheese and beat for a few minutes to combine. Make sure everything is mixed properly, then add the icing sugar to it.
8) Cut the cake horizontally in four pieces and place the first one on the serving plate spread 1 to 2cm of icing on it and repeat it on all layers
9) Finally keep the cake in air tight container and the cake is ready to eat after 4-hrs.
It took us six long hours to prepare this cake. Sophia helped me in every phase to get the best homemade red velvet cake. Once everything was done, we both sat on our couch and tasted the yummiest cake. Sophia watched her favourite cartoon show on television and enjoying every bite of it.
