I decided to try and bake a cookie cake, using the Scrummy Yummy Cookie Recipe that I posted earlier this week.  My cookies have always been popular so I thought that a cookie cake would go down a treat!

I made the dough in exactly the same way as I make the smaller cookies and added chocolate chunks to 2/3’s of the mixture.

* It turned out that a 3rd would have been enough but I was glad I used 2/3’s as I made a mistake.  Wasn’t sure whether or not to tell you about my mishap but thought that I learnt from it and so could you.  (See Below) *

 

 

 

 

 

 

 

 

 

 

 

I then rolled 1/3 of the mixture into a ball, placed it in a 10″ cake tin and flattened it slightly (as I do for the smaller cookies).  This was my mistake.  The Giant Cookie didn’t spread as much as the small ones and I was left with a doomed cookie that had overcooked edges, in order to cook the middle.  It still tasted yummy, but it did not look very nice.  If you make a Cookie Cake, make sure that you flatten the mixture until there is only approximately a 2″ gap around the edge of the tin.  When I did this, on my second attempt, it spread perfectly.

* Please ignore the grease proof paper mess, I couldn’t find any scissors anywhere! ;o) You would not believe that I have 4 pairs! *

 

 

 

 

 

 

 

 

 

 

 

Then I used my trusty chocolate cupcake frosting (which I will post, along with the cupcake recipe at a later date) and decorated the cookie.

 

I then added some smarties and Voila!!!

I can’t wait to eat a piece but I will have to wait until the birthday boy has seen it!
