I am always late making my Christmas cake. I intend to make one in October but, before I know it, December arrives and I still haven’t made one. This week we have had lots of fun baking, decorating and eating some gingerbread decorations for our Christmas tree. My fun photo favourite last week was by Laurie from Pride In Photos. I have a bonfire toffee recipe that I used last year. It made toffee that tasted nice but it was really hard. I prefer my toffee to be chewy. I thought if I boiled the toffee for a shorter time it might make it chewy. I was wrong. The sugar didn’t dissolve and it tasted awful.
